 Palak Paneer
A classic North Indian dish made with spinach and paneer cheese in a rich, creamy sauce.

 Ingredients
- 500g spinach, washed and chopped
 - 250g paneer, cubed
 - 2 tbsp oil
 - 1 onion, finely chopped
 - 1 tomato, chopped
 - 1 tbsp ginger-garlic paste
 - 1 green chili, chopped
 - 1 tsp cumin seeds
 - 1/2 tsp turmeric powder
 - 1 tsp garam masala
 - 1/2 cup cream
 - Salt to taste
 
Instructions
Blanch spinach in boiling water for 2-3 minutes, then transfer to ice water.
Drain and blend the spinach into a smooth puree.
Heat oil in a pan. Add cumin seeds and let them splutter.
Add chopped onions and sauté until golden brown.
Add ginger-garlic paste and green chili. Sauté for 2 minutes.
Add chopped tomatoes and cook until soft.
Add turmeric powder and garam masala. Cook for a minute.
Add spinach puree and salt. Cook for 5 minutes.
Add paneer cubes and simmer for 5 minutes.
Stir in cream, cook for another 2 minutes.
Serve hot with roti or rice.
