Vegan Chana Masala

A hearty and flavorful chickpea curry that's completely plant-based and packed with protein.

Ingredients

  • 2 cans chickpeas, drained and rinsed
  • 2 tbsp oil
  • 1 large onion, finely chopped
  • 2 tomatoes, pureed
  • 1 tbsp ginger-garlic paste
  • 2 green chilies, chopped
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp garam masala
  • 1/2 tsp amchur (dried mango powder)
  • Salt to taste
  • Fresh coriander, chopped
  • 1 lemon, cut into wedges

Instructions

  1. Heat oil in a pan. Add cumin seeds and let them splutter.

  2. Add chopped onions and sauté until golden brown.

  3. Add ginger-garlic paste and green chilies. Sauté for 2 minutes.

  4. Add tomato puree and cook until the oil separates.

  5. Add all dry spices: coriander powder, turmeric, red chili powder, and salt.

  6. Add chickpeas and mix well. Cook for 5 minutes.

  7. Add 1 cup water and simmer for 15 minutes until the gravy thickens.

  8. Sprinkle garam masala and amchur powder. Mix well.

  9. Garnish with fresh coriander and serve hot with rice or roti.

  10. Serve with lemon wedges on the side.
